Bar Nouveau

Bar Nouveau emerges as a modern homage to Belle Époque refinement on 5 Rue des Haudriettes, nestled in the Marais. Conceived by Remy Savage alongside Sara and Hadrien Moudoulaud, this compact cocktail bar plays out over two floors, turning every detail into a curated gesture. The marble-topped, crescent-shaped bar sits under mirrored ceilings and tulip-light fixtures—each design decision referencing the organic curves and floral motifs of Art Nouveau. The ground floor is luminous, intimate, and deliberate; the stairs lead to a darker, subterranean space with exposed brick, contrasting textures, and creative cocktail reinterpretations.

Cocktail programs here celebrate both nostalgia and precision. A small menu of six rotating drinks (around €9–12) showcases historical French spirits like vintage vermouths while modern techniques—such as centrifugation—reanimate classics with unexpected twists. The Ramos, served with an oyster shell spoon, alongside reinterpretations like Fine à l’Eau (cognac, verjus, soda), underscore Bar Nouveau’s balanced reverence for the past and celebration of craftsmanship.
